Pancakes

This recipe is an adaption of GraceandGoodEats.com ‘s recipe. I had to change it the Eid of 2020 when we were on lockdown. I can’t remember why. I didn’t change much. I also doubled it. I’ve linked her recipe.

Sometimes I double this recipe so I can make lots of mini pancakes for school lunches and snacks for my kids. They love it with honey or pure maple syrup.

Ingredients:

3 eggs

pinch of salt

1 teaspoon vanilla

1/4 cup sugar

1/4 cup of oil (I use olive oil)

2 1/2 cups of milk

3 cups flour

3 teaspoons baking powder (my mom’s tip: add it last, it’ll give very fluffy pancakes)

Don’t over mix, its ok if their are lumps.
