Lentil Soup (Shurbat Addass)
This is my recipe for Lentil Soup. I realize its more of a vegetable soup. I like to add as much nutriotnal value and flavor to it. My youngest (4) is going through a very picky phase and this is one of his favorite meals. (accompanied with white rice)
Ingredients:
1 cup of orange split lentils
2 potatoes
4 carrots
one large onion
one head of garlic (it may seem like a lot but you can barely taste it after its been cooked and blended)
Directions:
Peel and cut the vegetables into cubes expect the garlic cloves.
Add everything to a pot and fill with water. (I added about 10 cups you can add less if you like it thicker.)
When it starts boiling scrape off the white foam.
Let it simmer until all the vegetables are cooked and soft.
add about 2 teaspoons salt
3 teaspoons cajun spice
2 teaspoons cumin.
Blend until smooth in blender (or food processor)
