Okra Stew (Bamia B’zait)

This is my mother in law’s recipe for Okra. We call it B’zait with means with oil and means it’s a vegetarian dish.

Ingredients:

2 cups of Okra (my mother in law says the big ones are the best for this dish, she uses the small ones when she cooks them with lamb.)

2 heads of garlic, peeled.

4 ripe tomatoes cut into small cubes.

2-3 cups of fresh tomato puree.

Directions:

Sauté the garlic in some olive oil until golden.

Add the okra and sauté until slightly darker.

Add the tomatoes and let simmer until tomatoes are soft.

Add to tomato puree and let it simmer on a low heat until the okra is cooked.

Add about 2 teaspoons salt

1/2 teaspoon black pepper

1 teaspoon cumin

Served with pita bread.
