Banana Bread Mini Cupcakes

This is mom’s recipe for banana bread, I use it to make mini cupcakes. They turn out moist and fluffy and amazing!
Ingredients:
6 eggs
1 cup of sugar
1 teaspoon of vanilla
pinch of salt
3 ripe bananas and a teaspoon of ground cinnamon mushed together with a fork. You can add a little lemon juice to stop the browning but I don’t.
2 cups of flour
3/4 cup crushed walnuts (optional) (If you’re going add the walnuts, take 1/4 cup from the flour in the dry ingredients and mix it with the walnuts to stop them from sinking to the bottom.)
Directions:
Preheat the oven to 180 degrees Celsius.
Add the eggs one after the other while mixing, until slightly frothy
Add the suagr gradually.
Add the vanilla and salt.
Slowly add the banan mixture.
Slowly add the flour and baking powder.
Pour into mini cupcake molds.
Put the pans in the oven for 5 minutes then turn the tray around and bake for 3 minutes (times will vary depending on your oven).
I like to take the cupcakes out of the pan immediately o cool down on a cooling wrack.
