Sugar Cookies
I have been using this recipe for at least 11 years. it says in my ancient oil stained notebook; foodntwork.com. I searched and found this recipe for Nigella Lawson that is the same as my recipe except half the amount and the butter is measured in tablespoons. I’m not sure this where I got it is seems close enough.
Ingredients:
2 Sticks of unsalted butter (room temperature)
1 cup of sugar
4 eggs
1/2 teaspoon of vanilla
pinch of salt
3 cups of flour (more or less, depends on the size of the eggs. I plan to weight eggs and edit the recipe because I learned the hard way that the size of the eggs is really important)
1 teaspoon baking powder
Directions:
Cream the butter and the sugar until the sugar is dissolved and the butter is creamy and lighter in color.
Add the eggs one at a time while mixing.
Add the vanilla and pinch of salt.
Add the flour gradually while mixing. You want a slightly sticky dough. Add the baking powder in-between the flour. I posted a video on Instagram of what the dough should look like.
Avoid over mixing because then the dough will become more bread like.
I like to divide it into two disks and cover each disk individually. I use plastic containers because I don’t use plastic wrap anymore. Refrigerate for at least two hours. I like to leave it over night. You want the butter to get cold again and solidify. The colder the dough is the less it will spread in the oven.
Take out one disk at a time so the dough stays cold. (you don’t want the butter to become warm)
Roll into desired thickness, I don’t like them too think so I roll them to 5 mm.
Cut into desired shapes.
Place in baking sheets. They should spread much so you can put them close toothier but leave a 1 cm space.
When the baking tray is full place in the fridge or freezer if you have space, leave for at least 2 minutes. The idea is if the butter is cold it won’t spread.
Turn on the oven to 180 degrees Celsius.
Bake for 5-7 minutes. It depends on how thick you make them. I turn the tray around half way through because one side of my oven is hotter than the other. If your not sure bake one or two to test the timing. You want the edges to be slightly golden and golden on the bottom.
Gently remove them and place on a rack to cool.
